Making sourdough at home is a great way to provide large amounts of food with few ingredients.

Being able to make sourdough is an art form, you can make it multiple times and have it come out different each time. The key to making perfect sourdough is getting the timing and moisture content just right, Once you have mastered the preparation the reward will be an endless amount of fresh, delicious and healthy sourdough bread. 

Flour Mill Sourdough

Grind it or buy it, basic sourdough ingredients.

The basic ingredient for making sourdough is flour. You will want to have plenty stored up in long term storage such as sealed cans. If you have the skills and space you can also produce your own flower with a flour mill. You will need to have some sourdough “starter” also, this can be purchased online and should be stored in a freezer ideally.

Step by step guide to making sourdough:

1. Mix water, flour and starter with a spoon until incorporated and cover with a loose plate or plastic wrap for 30 min

2, Without taking the dough out of the bowl, add salt and squeeze into dough incorporating and stretching for a few minutes, form into a ball and cover with a plate or wrap for 2 hours

3. Take out of bowl and stretch/fold for 2 minutes on a very lightly floured surface. Place back into bowl and place damp tea towel over bowl. Sits for 5 hours in a warm spot of house

4. Remove from bowl. Stretch/ fold for 2 minutes

5. Form into ball and place in bowl with plastic wrap or loose plate on top. Put in fridge 5 hours or overnight

6. Remove from fridge. Remove ball of dough and cut into half. Stretch each half 2 minutes and then sit on counter for 20-30 minutes.

7. Stretch fold each half 2 minutes and place, then form into a ball. Place each ball onto a stretch of parchment paper and place into two separate bowls with tail of parchment paper folded over on top. Sit for 1 hour

8. While it’s sitting for an hour, turn oven on 475 or 480. Put Dutch oven without lid in the oven while it’s preheating

9. After an hour place dough still in parchment paper into hot Dutch oven. Pour 5 tablespoons of water onto bottom (under parchment paper not touching dough) to create steam. Put lid on
 
10. Bake 55 minutes  (Remove lid for last ten minutes if you want darker golden crust)
